Our team is often on the move, with photo shoots, meetings and events to run between. We’re always on the lookout for fresh, nutritious food that’s easy to pick up and go. The newest location of bubu in downtown Denver’s Republic Plaza satisfies all our needs and we headed there for a quick lunch a few weeks ago. We were able to work for a bit while Chef Troy Guard served up some signature bowls.
bubu’s name comes from Bubu Arare crackers, a tiny baked Japanese cracker that packs a whollop of a crunch and is used as a garnish. bubu first opened on Larimer Square with fresh, fast bowls with flavors from the Pacific to the distinctly Colorado. The newest location in Republic Plaza is the first of three new TAG openings this summer from Chef Troy Guard. It keeps to the initial roots of bubu but has some new bowl offerings to keep things different.
Step one to ordering at bubu is to choose your bowl. You can also take a DIY route and make your own bowl completely from scratch. There’s not a bad bowl on the menu and each has a masterful mix of sweet, savory, crunch and flavor. Once you’ve decided on your bowl, choose the base it’ll lay on. We recommend a half/half base of rice and bubu salad mix. Then comes your proteins and your dressings. Bowls come with their dressings on the side, perfect for you to drizzle at your leisure. Bonus – it keeps your bowl from ending up a soggy mess as you transport to back to your desk or eat on the way to your next meeting.
We chose to grab a spot in the shade of Republic Plaza’s patio to enjoy our bowls. It’s the perfect place to people watch while you enjoy a quick break from the day.
